Best Ever Sweet & Salty Cookies

Loaded with chocolate, caramel, pretzel, and roasted nuts....trust me, you want to make these.

  cup granulated sugar
  cup brown sugar
 1 egg
 1 tsp vanilla paste (or extract, if you can't find paste)
 2 cups flour
 1 tsp baking soda
 ½ tsp salt
 ½ cup semi-sweet chocolate chunks using high-quality chocolate really makes a difference here!
 ½ cup caramel candies, chopped into pea-sized piecesTry to find one that's firm, but not too sticky to chew. I used Werther's Original Soft Caramels
 ½ cup chopped roasted, salted almonds
 ½ cup chopped pretzels

Preheat oven to 350F/175C (155C for fan oven).

Stir or sift together flour, salt, and baking soda in a medium bowl.

In a separate large bowl, add granulated sugar, brown sugar, and egg. Cream using an electric mixer (mixture should be shiny and a little fluffy when you're done).

Add egg an vanilla, and mix to combine.

Stir in dry ingredients, trying not to over-work the dough.

Stir in chocolate chunks, caramel bits, pretzel bits, and almond bits.

Try not to eat all the dough.

Line a baking sheet with parchment paper. Roll dough into golf ball-sized spheres and arrange on sheet, leaving at least 3" between balls.

Bake in preheated oven on the middle rack for 11 minutes, or until cookies are done to your liking. Cool for at least 10 minutes before removing from baking sheet.
