Cheesy Tuna Pasta with Veggies

Main Ingredients
 200 g whole wheat penne (or other pasta)
 1 small zucchini (courgette)
 1 small head broccoli
 1 can (145g) tuna chunks, drained
Cheese Sauce
 1 cup milk
 1 tbsp butter
 1 tbsp plain flour
 50 g pecorino, grated
 50 g mature cheddar, shredded
 1 tsp salt
 ½ tsp garlic powder
 ½ tsp onion powder
 ¼ tsp ground yellow mustard powder
 freshly ground pepper (to taste)
Pasta

Boil a large pot of well-salted water for pasta. Cook as directed and drain.

Prepare Veggies

Quarter and slice the zucchini. Cut florets from the broccoli. Combine in steamer and steam until cooked.

Make Cheese Sauce

Combine flour and butter in a small saucepan over medium heat. Cook until bubbly, 1-2 min.

Add milk and heat until simmering. Turn down heat and continue to simmer until thickened.

Add cheese, salt, and spices. Season to taste with pepper/additional salt. Stir well to combine.

Mix It All Together

In a large pot combine steamed veggies, pasta, tuna, and cheese sauce. Stir to combine and serve.
