Homemade English Muffins

 125 ml milk
 125 ml warm water
 1 tbsp caster sugar
 4 g active yeast
 25 g butter (melted)
 400 g flour
 1 tsp salt
 cornmeal (if desired)

Heat milk until it just starts to bubble. Cool until lukewarm. Combine with warm water, yeast and sugar. Stir until combined. Let stand 10 min.

Add butter, salt and flour. Stir well to form a soft dough. Knead well with additional flour as needed to keep the dough from getting too sticky.

Cover and let rise until doubled.

Punch down dough. Roll out on floured surface to about 1 cm thick.

Cut rounds using large glass or biscuit cutter. Sprinkle with cornmeal, if using.

Allow to rise on parchment paper until doubled again.

Grease a frypan and place over medium heat (350 degrees). Cook approx. 3-5 min each side until both sides are nicely browned.
