An easy and low-calorie recipe that works for any meal!

Adjust oven rack to medium height and place 10-inch cast iron skillet on rack. Pre-heat oven to 400F/200C with skillet inside.
Crack eggs into a medium bowl and whisk.
Add flour, baking powder, and spices. Whisk until smooth with no lumps.
Add green onions and allow batter to rest for 5-10 minutes.
Once oven has preheated, remove skillet. Add butter to skillet and carefully swirl to coat.
Place skillet on stovetop over medium-high heat.
Add batter to skillet and allow to cook for 2-3 minutes, until edges begin to set.
Spread gruyere cubes and sliced tomatoes evenly over the top.
Return skillet to the oven and cook for approximately 25 minutes, or until center is fully set and edges are starting to brown.
