Teriyaki Tuna Soba Noodle Salad

 200 g soba noodles
 100 g mandarin orange segments
 2 cups mixed greens
 1 large carrot, sliced
 1 tinned tuna steaks
Teriyaki Sauce
 2 tbsp toasted sesame oil
 1 tbsp rice vinegar
 1 tbsp brown sugar
 ¼ tsp garlic powder
 ½ tsp ground ginger
 1 tbsp dark soy sauce
 1 green onion, sliced thin

Boil soba noodles according to directions. Rinse with cold water and set aside.

Chop mixed greens and carrots and arrange in serving bowls.

Combine all oil, vinegar, sugar, garlic, ginger, and soy sauce in a small bowl. Add green onions and stir until dissolved and combined.

Add half of the sauce to the the noodles and stir to combine.

Add tuna to salad bowls and pour remaining teriyaki sauce over. Serve immediately.
