A great plant based alternative to scrambled eggs!
Heat oil in a large sautee pan over medium heat.
Crumble tofu into pan. Cook, stirring frequently, until tofu is mostly dried out and just beginning to get crispy on the edge in a few places. This should take only a few minutes for extra firm tofu, but will take longer if tofu is softer.
Add nutritional yeast and spices, and stir until evenly combined.
Stir nut milk in and cook until fully absorbed, but still fluffy.
Adjust seasoning as needed.
