Vanilla Coconut Chia Pudding

 1 Vanilla bean
 5.40 oz Coconut cream
 2 tbsp Honey
  tsp Salt
 10 tbsp Chia seeds
 2 cups Almond milk

Split vanilla bean lengthwise and scrape out seeds.

Place vanilla bean seeds and pod in a small saucepan. Add honey, coconut cream, and salt, and cook over medium-low heat, stirring frequently, until honey is completely melted and mixture is beginning to simmer.

Whisk in chia seeds.

Whisk in almond milk immediately.

Allow to steep for 10 minutes, whisking frequently. Don't skip the whisking, or the chia seeds may get clumpy!

Remove vanilla pods and refrigerate until cool. Serve with berries and enjoy!
