A quick and healthy appetizer idea
½ Large Cucumber
7 ½ Cherry Tomatoes, Halved
⅛ cup Hummus
1 tbsp Chopped Parsley

Peel cucumber, if desired, and slice into 1/4" rounds.

Lay cucumber slices out on a serving tray, and top each with a dollop of hummus (a piping bag works well for this).

Top each cucumber/hummus stack with a cherry tomato half.

Sprinkle with parsley, to taste.
